Thankfully I found a pretty comprehensive list on Wikipedia and was able to narrow down my Sleep List to two categories from their list. Even still, with all the generations of history that Italy has making pasta - a few traditional shapes that were rolled still made the list of 'cut' pastas because some portion of their fabrication involves cutting.
In the episode each pasta shape is thoughtfully arranged in alphabetical order, accompanied by a gentle description and the sometimes poetic, often practical meaning behind its name if that was available as I did my research.
